Mommy’s Green Juice
I started making this recipe back in 2013 when I was pregnant with my first kid, I was super duper sick and had a hard time getting nutrients in those first few weeks. Since then I’ve been making it for the whole family and everyone begs for it! To me this is considered a juice and not a smoothie, however, with the addition of the avocado this juice is so luxurious – the texture has kids thinking its some sort of desert!
Mommy’s Green Juice
Supplies needed:High powered blender such as a Vitamix or Ninja.
Ingredients
- 1 cup Organic Kale chopped
- 1 cup Organic Spinach
- 1 medium Organic Cucumber Large chunks – Skin on
- 1 Organic Green Apple quartered – with core
- 1 Organic Avocado discard seed and skin
- 1 stalk Organic Celery strings discarded
- 1 Organic Banana skin discarded
- 4-5 Mint Leaves a few saved for garnish
- 1 cup Ice
- 4-6 cups Water
- 1 Juice of 1 Lime
Instructions
- Get your high powered blender ready. Throw in all of the chopped up fruit and vegetables into the blender. Add in two or three of the mint leaves. With a citrus juicer, squeeze the lime juice over the fruit and vegetables. Top with 1 cup of ice and fill the blender with water (leave an inch of room on the top).
- Cover blender tightly with cap, turn on blender at a low speed, increasing the speed every 15 seconds. Once everything is broken down, turn blender on high for 1-2 minutes adding additional time as needed to get to your preferred consistency. Pour and serve, garnish with remaining mint leaves.
Notes
This juice is best made with a Vitamix as it contains the vegetable and fruit skins and cores. This type of high powered blender really does a great job of breaking down the tough stuff and getting the juice to its smooth consistency. This will stay good in the refrigerator for up to 3 days. Enjoy!!
